We will explore the secrets to bake the perfect Pan di Spagna, i.e. the traditional genoise-style sponge that is the pillar of all traditional Italian cakes. We will learn how to make different types of crème pat, custom made to your own taste and favourite flavours. Most importantly, we will learn how to pair the creams to a range of different syrups, the real signature piece of any Italian cake! We will also look at various ways of decorating our cakes with simple but indulgent variations of Chantilly and mascarpone creams.
This class is suitable for beginner with little or no experience of baking as well as more experienced bakers looking for some Italian inspiration.
Ingredients, consumables and access to all necessary baking tools and equipment, a generous Italian lunch with wine and refreshments throughout the day. You do not need to bring anything with you other than a large container or a bag to take home some of your delicious bakes.
