We will prepare the traditional ciambellone di Pasqua, the Easter cake originally from my hometown in Italy, for our elevenses. We will practice our piping skills with fragrant paste di mandorla (almond cookies) and then celebrate spring with crostatine al marzapane (marzipan tarts) and pistacchini (pistachio and white chocolate cookies), before venturing in pastiera, the iconic, orange blossom flavoured Easter tart from Naples.
You will be treated to a generous Italian lunch, typically including a starter of dips like my garlic-free hummus or my Tuscan chicken liver patè, a seasonal soup like roasted peppers or asparagus, a substantial main like my iconic meatballs or a selection of Italian cheeses, a fresh salad like tomatoes & cucumber or rocket & parmesan, all accompanied by my favourite Italian red and white wines. Needless to say, everything is strictly home-made!
As well as lunch, coffee, tea and refreshment throughout the day, everything else is included: pre-weighed ingredients, consumables and access to all necessary baking tools and equipment. You do not need to bring anything with you other than a few containers to take home some of your delicious bakes.
This class is suitable for beginners with little or no experience of baking as well as more experienced bakers looking for some Italian inspiration.
This class uses gluten, dairy products, eggs, nuts, seeds, sulphites, gelatine, celery, and other known allergens. We take caution to prevent cross-contamination, but equipment and tools will be shared during the class, therefore we are unable to guarantee that the food is allergen free.
